Probably the simplest dish ready in 10min but with no compromise on flavours. Breaking the quail egg yolk adds a satisfying creaminess that coats the fatty salmon, before rounding it out with a citrusy aromatic ponzu sauce.

Ingredients
- 200g sashimi grade salmon cut into big chunks
- 1 tbsp chives finely chopped
- 1/2 tbsp grapeseed oil
- 4 tbsp yuzu dressing
- 1 tbsp soya sauce
- 1 tbsp yuzu juice
- 2 quail eggs
Method
1. Make the ponzu sauce by mixing the yuzu dressing, soya sauce and yuzu juice together. Taste and make adjustments to your liking.
2. Put the chopped salmon, chives in a bowl, dress well with 1 tbsp of the ponzu sauce, and the grapeseed oil. Let it marinate for a few minutes.
3. To plate, place salmon tartare mixture in the middle of the plate, top with a quail egg yolk, and finish with the dressing around the tartare. Enjoy!
