Burrata, Mixed Cherry Tomatoes, Parsley Flower



Easy, festive and tasty, this is one of my to go to side dish for Christmas. The longest part of the cook is slicing all the tiny cherry tomatoes, so use larger tomatoes if you want something less fiddly.


Difficulty: Easy

Time: 15 minutes

Serves: Up to 12 as a side dish


Ingredients

- 600g mixed tomatoes sliced

- 2 burrata cheese

- 4 tbsp red wine vinegar

- 4 tbsp olive oil

- salt

- pepper


Garnish

- parsley flowers (or fresh herbs)


Method

1. Place the burrata in the middle of the plates. Place tomatoes around it. Dress with red wine vinegar, olive oil and season with salt and pepper.


The key to the dish is getting the best tomatoes and burrata you can find and have fun playing it up adding or changing the components as you like, vino cotto or balsamic vinegar, shallot, capers, basil and other fresh herbs, add some or all of it. Enjoy!
