This is a light tasty quick weeknight dinner ready in less than an hour.

Ingredients
Rockling
- 2 rockling fillets
- 3 tbsp butter
- 1 tbsp oil
- salt
- pepper
Pea Puree
- 1 brown onion sliced
- 2 cups of frozen baby peas
- 1 cup of chicken stock
- 2 tbsp fresh dill
- salt
- pepper
Fresh Herb Salad
- 1/2 cup mint roughly torn
- 1/2 cup fresh dill roughly torn
- 1 tbsp fresh lemon juice
- 1 tbsp olive oil
- salt
Garnish
- fresh herb oil*
* If you have some fresh herb oil sitting around, you can use it for garnish, otherwise simply leave out this step. For the recipe for the fresh herb oil I used, refer to the link below:
Method
1. Make the pea puree by sautéing the sliced onion in a small sauce pan until caramelised, add the frozen peas and fry for a minute to defrost, before adding the chicken stock. Bring it boil for a few minutes. Transfer to a food processor, add the dill and blitz until a smooth. Season to taste with salt and pepper.
2. Add the fish to a hot pan with melted butter, season well with salt and pepper and cook for 8-10 minutes until golden and cooked through.
3. Add salt, lemon juice and olive oil to the fresh herbs and give it a gentle mix with your hands.
4. Plate by pouring some pea puree in the middle of the plate, top with the pan fried rockling fillet, and fresh herb salad. Enjoy while it's hot!
