Oysters with Tetsuya's Rice Wine Vinaigrette Dressing


This is my favourite vinaigrette dressing to go with fresh oysters, based on Tetsuya's recipe.

Ingredients

- 12 fresh oysters

- 1 tsp ginger finely grated

- 4 tbsp rice wine vinegar

- 1 tsp castor sugar

- 1 tsp soya sauce

- 6 tbsp grapeseed oil

- 2 tbsp olive oil

- 1/2 tbsp lemon juice

- 1 tbsp fresh chives finely chopped

- 3 tbsp tobiko (flying fish roe)


Method

1. Make the dressing by combining the ginger, rice wine vinegar, castor sugar, soya sauce, grapeseed oil, olive oil and lemon juice and mix it well.


2. Dress over the oysters and garnish with tobiko and chives.
