Charcoal Brocollini, Miso Cashew Sauce



Another easy side dish to share at Christmas dinner. If you can, I would highly recommend cooking the broccolini over charcoal as it gives off a lovely smoky flavour to the dish. Cooking the broccolini in oven or pan would work as well.

TIme: 30 minutes

Serves: 2 side dishes


Ingredients

Charcoal Broccolini

- 2 bunches broccollini stem trimmed

- oil

- salt


Miso Cashew Sauce

- 1/3 cup unsalted cashew nuts

- 2 tsp good quality white miso

- 1/4 cup milk


Garnish

- 2 pinches of charcoal powder


Method

1. Start on charcoal BBQ.


2. Toast the cashew nuts in a thick pan over medium fire until nice and golden.


3. Add the miso, toasted cashew nuts and milk to a spice blender. Blend into a smooth paste, taste and adjust thickness, add more cash nuts, or miso or milk until it achieves the consistency required. Set aside.


4. Rub oil over the broccoli and cook over charcoal for a few minutes until it's just cooked. Season lightly with salt.


5. Place the broccolini on a plate, serve with a generous spoonful of the miso cashew sauce and garnish with charcoal powder.
