Glass Potato Chips


This was such a fun little project for me that I feel like it deserve its own little post, even if it's just a snack. Everyone, meet glass potato chips and yes, it does taste like chips except i's even thiner and lighter. This is my first time making it so I've kept it quite simple but you can already imagine the endless amount of flavours, aroma and colours you can infuse into this crystal delight. I can't wait to experiment more with this technique.

Time: 2.5 hrs

Serves: 1-2*


* I could easily eat it all on my own. But the recipe below will make you roughly 2 baking trays full of chips.


Ingredients

- 2 potatoes peeled and diced

- 2 cups water

- 2 tbsp potato starch

- 1 tsp olive oil

- salt


Method

1. Put the diced potato, water, oil and enough salt to taste in a pot. Bring it to boil and simmer over low heat for 30 minutes to make a potato stock. Let it cool and pass it through a stock bag to clarify the liquid.


2. Pre-heat the oven to 75 degrees. Add the potato starch to the potato stock and mix well ensuring there is no lumps. Heat up the liquid on stove top and bring to boil and whisk continuously until it turns into a gel like (or glue like) consistency. Let it cool down a little before pouring it into a sauce bottle.


3. Lay out baking sheets on a flat baking tray, squeeze the gel into the size of potato chips onto the baking sheet. Continue until finished.


4. Bake it in oven for 1 hour and check. It should be fully dried when ready. Continue baking for longer if more time is needed. For a darker more brown colour, you can cook it for a further 15 minutes until it achieve the colour desired.


6. Let it cool down completely and carefully peel the potato chips off the baking sheets and enjoy!
