Fresh Pine Mushroom Pizza with Quattro Formaggi


I wanted to make the most of fresh pine mushrooms whilst they are in season and who doesn't love a good pizza. The mushrooms is paired here with 4 different cheeses, fresh herbs and lemon zest on a crusty base. Yum.

Time: 10 min prep, 30min cooking

Serves: 2


Ingredients

Pizza Dough

- 2 medium pizza base*


Topping

- 200g fresh pine mushrooms sliced

- 1/2 tbsp fresh oregano

- 1/2 tbsp fresh thyme

- 1 garlic clove crushed

- 150g ricotta cheese

- 1 cup mozzarella

- 2 handful parmesan

- 6 slices of camembert

- 2 tbsp olive oil


Finish

- lemon zest

- lemon juice


* I made my own following the recipe below with my sour dough starter. You can make it based on our favourite recipe or buy ready made ones if you want to skip this step.

Method

1. Pan fry the sliced mushrooms with garlic, oregano and thyme till softened and fragrant.


2. Top the pizza base with with ricotta, then mozzarella, parmesan, camembert and pine mushrooms. Bake for 15 minutes.


4. Finish by sprinkling lemon zest and lemon juice over the pizza.
